Forks Over Knives — The Cookbook

Del Sroufe

The companion cookbook to the influential documentary *Forks Over Knives*, offering more than three hundred whole-food, plant-based recipes with no added oils. Chef Del Sroufe translates the film's low-fat, plant-based message into everyday cooking — breakfasts, soups, mains, and desserts that are globally and seasonally inspired and built entirely from vegetables, fruits, whole grains, and legumes. The premise, drawn from the movement's advocates, is that this way of eating can help with weight, cholesterol, and chronic disease, and the book frames itself around abundance rather than restriction: what one can eat, not what one can't. A long-running bestseller, it became a gateway cookbook for people moving toward plant-based eating, valued for approachable, reliable recipes that don't depend on specialty ingredients.

The author

Del Sroufe is an American chef who has cooked in vegetarian, vegan, and whole-food plant-based kitchens for decades and is associated with the T. Colin Campbell Center for Nutrition Studies. He wrote the cookbook as the culinary complement to the 2011 documentary, whose central figures were researcher T. Colin Campbell and surgeon Caldwell Esselstyn.

The book

Forks Over Knives — The Cookbook (The Experiment, 2012) collects 300-plus oil-free, whole-food plant-based recipes and spent many weeks on the New York Times bestseller list.

How to read it

As a cookbook it is practical and well-tested; the recipes work and the ingredients are accessible. Its dietary claims are more contested: the underlying low-fat, plant-based research (Campbell's China Study, Esselstyn's heart-disease work) has been criticized by some nutrition scientists as overstating causation and the disease-reversal message. Mainstream bodies endorse well-planned plant-based diets as healthful without necessarily endorsing the stronger "reverse disease" framing. Cook from it happily; weigh the health rhetoric critically.
